Vegan Roasted Red Pepper Pasta

Recipe Based on Vegan Roasted Red Pepper Pasta by Minimalist Baker

Ingredients:

  • 1 package of linguini or spaghetti noodles (or other noodles of choice)

  • Already prepared Roasted Red Pepper sauce

  • 1 handful of parsley leaves, chopped



Method:

  1. Heat a frying pan, add 1 tsp of olive oil. Pour sauce in the skillet over medium heat to thicken. Make sure to mix and not let burn. Once it reaches a simmer, reduce heat to low and continue simmering.

  2. Once the sauce is thickened to desired consistency, add noodles. However, before tossing add a touch more olive oil, salt and pepper to the un-tossed noodles for added flavor. Then, toss to coat.

  3. Serve with red pepper flakes and fresh chopped parsley.
